As I may have said before, my wife does not care fore potatoes but she will eat them. I have found that if I doctor them up they go over purity well. This week end I am prepping for some friends to come over for dinner, the menu is Corned Beef and Cabbage with a Butter Rum graze and twice baked Potatoes. The Corned Beef and glaze recipes will be found in a the Urb an Cook when it comes out in November. But here is the Twice Baked Potato Recipe:
Bake as many potatoes as you will be serving.
Cut opened the potato and scope out the insides into a bowl.
Now add 1/2 teaspoon of minced garlic for each potato you baked.
1 tablespoon of sour cream and a 1/2 a tablespoon of butter.
I add some brown mustard but that is optional, so is shredded cheese.
Now blend the mix up until it is lite and fluffy. Then put the potato guts back into the skins and put the lids back on. When you are ready to sever put the potatoes back in the oven for about 10 minutes at 400° F. I hope you enjoy.
