That’s right, I said it! Meatloaf made from mostly Vegetable fiber. In fact this recipe only uses 1/4 of a cup of oatmeal. As always I wrote this down at the end of the week because that is when Kansa and I are down to nothing again and I feel that others can learn from the experience that was already lived through.
We had bought a two pound bag of carrots last week that needed two be finished off. We had a pound and a half of ground beef that we paid about $5.50 for. After taking a large mixing bowl and put the ground beef in it, we shredded the four carrots that were still good, into the bowl and added 1/4 cup of brown sugar.
We bought two white onions for $0.68 each and rotated out the one and a half onions that we already had in the fridge. Keeping a fresh stock of food, is most important. The onions were chopped and put in the bowl along with a 3/4 cup of shredded red potatoes. I added some prepackaged chili seasoning. We then added two eggs and a can of Tomato Sauce. After shredding 1/4 cup of Pepper-jack cheese into the bowl, I mixed it all together and preheated the oven to 200° F. I placed the mix into a pre-greased pan and into the oven it went.
After about 2 1/2 hours, I drained the grease of the top and kept it in oven for another 30 minutes. I then portioned out 10 servings for the weeks lunches. The portions were wrapped in plastic and put in the refrigerator.
This meal breaks down to about $0.80 a serving and still no food stamps.
